A beautiful 75-degree Minnesota Friday night and adults only (gasp!) with no baseball tournaments, hockey games or swim meets. I figure this is quite possibly our only night of the year like this…so we had a picnic!
Starting with herb marinated tomatoes with burrata, followed by smoked salmon avocado toasts and a pre-packaged mango salad and coconut cookies (thank you Trader Joe’s!) A South African chardonnay pleasantly surprised both of us.
A lovely, leisurely way to spend a gorgeous evening talking to each other. We’re just about a month away from our 20th anniversary and nothing makes me happier than slowing down to watch the world together. 😊

Salmon avocado toasts
- 4oz smoked salmon slices
- 4 pieces of rye toast
- 1 avocado
- Juice of 1/2 lemon
- 1/3c thawed frozen peas
- 1 tsbp chopped mint
- Watermelon radishes, shredded
Mash the peas and avocado together until smooth. Add lemon and mint. Season with salt and pepper. Assemble the toasts by layering avocado mash, salmon and top with radishes. Garnish with more mint and cracked black pepper.
